how to choose a commercial la marzocco machine (without overthinking it)

buying a commercial espresso machine is the biggest check most cafes write before they open. it doesn't have to be the scariest. here's how to think through the current la marzocco lineup like someone who has installed a lot of them.

start with your volume, not your dreams

the only question that really matters first: how many drinks are you making on your busiest day?

  • under ~150 drinks a day: a 2-group machine is plenty. don't buy a 3-group because it looks impressive. it eats counter space, power, and money you could spend on your grinder (we'll get there).
  • 150-400 drinks a day: 2-group still works if your workflow is tight, but this is where a 3-group starts earning its footprint.
  • 400+ drinks a day, or a rush where everyone's ordering at once: you're in high-volume territory. buy for the rush, not the average.

the current lineup, by job

la marzocco's commercial range right now: linea classic s, linea pb, linea pb x, gb5 s, gb5 x, kb90, strada s, strada x, and the leva s / leva x lever machines. here's what each one is actually for.

linea classic s - the workhorse. simple, tough, easy to service, and the least intimidating to train staff on. if you're opening your first cafe and want a machine that just shows up every day, this is the default answer.

linea pb / linea pb x - the cafe standard. the pb is the machine you see on bars everywhere because it balances consistency, durability, and price. the x version adds more modern electronics and control. if the classic s is the pickup truck, the pb is the one with better suspension.

gb5 s / gb5 x - for shops that care a lot about temperature stability across a long rush. if your menu leans on light-roast single origins and you taste everything, the gb5 line is built for you.

kb90 - the high-volume play. la marzocco redesigned the portafilter so it slides straight in instead of twisting, which saves your baristas' wrists over hundreds of lock-ins a day. it also auto-flushes the group with a burst of steam and water after each shot, so the machine stays cleaner through a rush. it's built on linea pb parts, so service is familiar. if your saturday line is out the door, this is the one.

strada s / strada x - for serious coffee programs. pressure profiling and per-group control for shops where espresso is the point, not just the base of a latte. only buy a strada if someone on your team will actually use what it does.

leva s / leva x - lever machines. beautiful, theatrical, and a real choice for a bar where the machine is part of the show. not a first machine.

then think about workflow, not specs

a few things that matter more than any number on a spec sheet:

  • who's making drinks? high staff turnover means simpler machines win. a classic s or pb with a trained team beats a strada with a confused one.
  • how big is your bar? measure twice. a 3-group kb90 is over 41 inches wide.
  • what's your service plan? machines need preventative maintenance. buy from someone who installs and services what they sell, or budget for a tech relationship from day one.

don't forget the grinder

we mean it: pair the machine right. a great machine with a weak grinder makes weak coffee. budget for the grinder at the same time, not after.
