how to make a matcha latte at home (that doesn't suck)

you had a matcha latte at a cafe. it was great. you bought a tin of matcha. you made one at home. it tasted like hot grass water.

classic. let's fix it.

this is the whole recipe, the same way we do it in our cafes, minus the fancy counter.

what you need

  • ceremonial grade matcha (yes, it matters. post #1 explains why - the short version: culinary grade is for cookies, ceremonial is for drinking)
  • water at about 175°f. not boiling. boiling water is the #1 matcha killer.
  • milk of choice. oat milk is the crowd favorite for a reason.
  • something to whisk with. a bamboo whisk (chasen) is ideal, but a milk frother or even a jar with a lid works. we'll get to that.

the ratio

  • 1 teaspoon matcha (about 2 grams)
  • 2 ounces hot water (a quarter cup)
  • 6 ounces milk

that's the cafe baseline. want it stronger? add matcha, not less water. want it sweeter? a little honey or vanilla syrup goes in AFTER the whisking, not before.

step 1: sift the matcha

push the powder through a small strainer into your bowl or cup. matcha clumps like powdered sugar, and clumps don't whisk out. 10 seconds, huge difference.

step 2: whisk with water first

add the 2 ounces of hot (not boiling) water. now whisk fast, back and forth in a W or zigzag motion, not in circles. 15 to 20 seconds. you're looking for a smooth, bright green liquid with a little foam on top.

this step is the whole game. matcha gets whisked with WATER first, always. dumping powder straight into milk is how you get swamp chunks.

no whisk? a handheld milk frother works great. no frother? put the matcha and water in a jar, lid on tight, shake like you mean it for 30 seconds.

step 3: the milk

hot latte: heat your milk until it's steaming, not boiling. froth it if you can (frother, french press pump, or another jar shake). pour it over your whisked matcha.

iced latte: fill a glass with ice, add cold milk, pour the whisked matcha on top. it does the layered thing on its own. feel free to feel fancy.

the 3 ways people mess this up

  1. boiling water. bitter city. let the kettle sit 5 minutes after it boils.
  2. skipping the sift. clumps forever.
  3. water last. matcha meets water first, milk second. order matters.

fix those three and your kitchen matcha beats most cafes.
